Rejecting industrially processed foods means we offer key benefits to our guests. Not only is our food healthier and tastier, it also eliminates significantly reduces our waste. The vast majority of the waste we produce is organic and can easily be composted and fertilize our greenhouse or it is used to feed our pet pig "Chaiten". It's crucial to avoid waste as there are no industrial sites in Aysen for recycling resources. This is why our luxury catamaran turns into a waste carrier at the end of every season to transport potential recyclables to the nearest facility in Puerto Montt.

In order to reintroduce the used water without affecting the environment, we treat the sewage in our own treatment plant.
